In a mixer-grinder, take about 15-16 garlic cloves, 1 inch ginger, 3-4 green chillies, & add some coriander leaves & a little water & grind it to a paste. You can see that our green paste is ready. Now, I’ve taken 6 hard boiled eggs & I’ve cut the eggs in centre to divide it in two halves. Cut all the eggs like this.
Now in a pan, take 3-4 tbsp oil & let it heat up nicely. then place the eggs like this on the pan. Cook them on high flame for just 1-1.5 minutes on one side. Along with that add 2 chopped green chillies, 1/4th tsp turmeric powder, a pinch of kashmiri red chilli powder, & add a pinch of salt.
Now carefully flip the eggs. Once you’ve flipped the eggs, then slightly shake the pan like this, & roast the eggs from the other side too for 1-1.5 minutes.
Once you’ve cooked the eggs like this, take them out in a bowl & keep them aside. Now, in the same pan, add some more oil, Once the oil is hot, then add 1/2 tsp cumin seeds to it, & add 3 chopped onions & sauté very well. Sauté the onions until they are golden brown in colour.
Once the onions are golden brown in colour, then add our green paste to it. & stir it & continue to cook it until the oil starts separating. It may take 2-3 minutes for the paste to cook well.
Once your masala is nicely cooked, Then lower the flame & add 1/4th tsp turmeric powder, 2 tbsp kashmiri red chilli powder, 1 tbsp spicy red chilli powder, 2 tsp coriander powder, 1/2 tsp garam masala, salt to taste, & now add 15-20 garlic cloves to this.
This is very important for this recipe. & add some hot water & stir it quickly. Now, you have to nicely cook this masala & have to cook it for 12-15 minutes. until the oil starts separating from it. During this process if your masala becomes dry, add some more hot water & cook nicely.
Since you are cooking on a skillet, add water little by little & nicely cook down the masala. Eating the whole garlic cloves is an exotic experience.
If you are a garlic fan, then you are going to love this recipe. You can see about 15 minutes are over, Our masala is cooked well & it has a nice gravy like consistency. & the oil has nicely separated too. At this stage, I’m added soaked 1 tbsp of tamarind pulp to this.
You can also add lemon juice in place of tamarind pulp. Stir it well & now taste the masala at this stage. For seasoning & the tartness. Our masala is ready.
Now add the boiled & cooked eggs to this. Like this, nicely arrange them on the pan. Once you have arranged the eggs like this, using a spatula flip them over like this.
When you flip the eggs, they will have a nice coating of the masala. Here, you don’t need to cook too much as the masala is cooked & so are the eggs. Add lots of coriander on top. & you can see our Anda Tawa Masala is ready. So, this Anda Tawa Masala is ready.
I usually toast the buns for it in a different way. Let’s see how I do that. Take a couple of bread roll & skewer the satay sticks or skewers through it.
