So I am going to start with Sautéing a few Vegetables for which I am going to heat a tsp of Butter. Once the Butter starts to melt, I am going to add-in half a Red Capsicum that I have diced. Toss them slightly.

I am also going to add in 12 Button Mushrooms that I have sliced. Give this a good toss and let it cook for about 3-4 Mins. The Mushrooms have started to cook at this point, I am going to add-in 1/2 tsp of Oregano, 1 tsp of Red Chilli Flakes, just a little bit of Salt.

Once the Mushrooms are cooked completely turn off the flame and let this cool down and meanwhile, we are going to make the Pesto Sauce.

I like to spice up my Pesto sauce with Green Chillies more than Pepper So I have taken about 2 Green Chillies that I have chopped up and I am going to add it into this blender also 6 cloves of Garlic (chopped up) 1 tbsp of Walnuts, 1 tsp of Sugar, 2 pinches of Pepper Powder, Salt to taste, 1 and a 1/2 cup of Basil Leaves, A tsp of Vinegar or Lemon juice.

Now I am going to grind this into a paste using a little bit of water. The Pesto sauce is ready. We are going to be making the Sandwich two ways one in the panini grill and one on the pan for those who don’t have a grill. So you can take any kind of Flat-bread that is available.

I have two kinds of bread that I am going to be using I have one which is a Focaccia Bread and I have also taken 2 slices of Multigrain Bread. Let’s slice up the Focaccia Bread. Let’s start assembling both the Sandwiches, so I am going to start by buttering the slices.

Next, I am going to generously spread the Pesto sauce. Well, I love my Pesto sauce, if you like it too stay tuned till the end for the tip. And now let’s start arranging the Vegetables.

So first, the Mushroom and the Bell Pepper let’s layer that. You will be able to make about 3 Sandwiches with this quantity Next, I am going to layer Onion and Tomato slices.

Let’s sprinkle a little bit of Salt and Pepper over it. And now, I am going to load up with some Cheese, I am using Mozzarella. Let’s cover this. The other one as well.

Apply a little bit of Butter on top. I have kept the Sandwich griller to heat up Let’s place the Focaccia Bread Sandwich on the griller slightly press on it. So one of the Sandwich is gone in the Panini Grill and the other one I am going to show you how to cook it on the pan.

Turn on the flame and once the pan is slightly hot we are going to place the buttered side on the pan. And then just take any kind of a steel plate place it on top and just take any kind of weight, place it over the plate.

So what happens is, when the Sandwich is compressed because of the plate it tends to become nice and crispy. Let the Sandwich cook on low heat. The Sandwiches are grilling and they will be ready in a few minutes.
